Baked Salmon Patties
 
 

Baked Salmon Patties

1 (14 3/4 ounce) can salmon (remove visible skin)
1/4 cup low fat mayonnaise
2 tablespoons finely diced onions or 1 tablespoon onion flakes
1/2 cup bread crumbs or corn flake crumbs (divided)
1 teaspoon lemon juice
1 egg white

Optional
2 tablespoons finely diced celery
1 teaspoon seafood poultry seasoning**

**For test purposes, Old Bay Seasoning was used.

Preheat oven to 350 degrees F. Spray inside of a 9x13 inch baking dish with cooking oil.

In a medium bowl, combine salmon, mayonnaise, onion, 1/4 cup of bread crumbs lemon juice and egg white. Optional seasonings can be added. Mix well. Shape into six patties (about the size of the palm of your hand). Dust surface with remaining bread crumbs. Place patties in the baking dish. Bake at 350 degrees F for 35 minutes. Turn patties during baking to create crispness.
