Kentucky Burgoo
Burgoo
is a Kentucky favorite, slowly cooked outdoors in large black
cast-iron kettles. Traditional burgoo was a stew consisting of
whatever meat and vegetables pioneers could find, including
rabbit, squirrel, and venison. Today's burgoo usually
substitutes pork, beef, and chicken for the wild game.
Anderson County holds a burgoo festival in September. |

Types
of Tofu
Firm tofu is dense
and solid and holds up very well in stir-fry dishes, soups, or
on the grill--anywhere that you want the tofu to maintain its
shape. Firm tofu is also higher in protein, fat, and calcium
than other forms of tofu.
Soft tofu is a good choice for
recipes that call for blended tofu or in Oriental soups.
Silken tofu is a creamy, custard-like
product which works well in pureed or blended dishes.
