Kentucky Fresh Slow Cooker
Mount St. Joseph Burgoo

8 ounces cooked boneless skinless chicken, chopped 
4 ounces cooked beef roast, chopped
1 cooked boneless pork chop, chopped
4 potatoes, cut into cubes
1/4 cup lima beans, cooked
1/4 cup navy beans, cooked
3 1/4 cups chopped tomatoes
1 1/2 cups shredded cabbage
1/4 cup whole kernel corn
1/3 cup Worcestershire sauce
2 tablespoons vinegar
1 teaspoon sugar
Salt and pepper to taste
3 cups water

Combine the chicken, beef, pork, potatoes, lima beans, navy beans, tomatoes, cabbage, corn, Worcestershire sauce, vinegar, sugar, salt, pepper and water in a slow cooker and mix well. Cook on Low for 8 hours. (You may substitute barbecued pork or mutton for one of the meats.) 
Yield: 15 servings.

Kentucky Burgoo

Burgoo is a Kentucky favorite, slowly cooked outdoors in large black cast-iron kettles. Traditional burgoo was a stew consisting of whatever meat and vegetables pioneers could find, including rabbit, squirrel, and venison. Today's burgoo usually substitutes pork, beef, and chicken for the wild game. Anderson County holds a burgoo festival in September. 

 
 
Kentucky Fresh Cayce Corn Bread

2 eggs
1 cup sour cream
1 cup cream-style corn
1/2 cup vegetable oil
1 cup self-rising cornmeal
1/3 cup chopped mild peppers
1/2 cup (2 ounces) shredded Cheddar cheese

Combine the eggs, sour cream, corn, oil and cornmeal in a bowl and mix well. Pur into a 9x9-inch baking pan sprayed with nonstick cooking spray. Layer the peppers over the top. Sprinkle with the cheese. Bake at 400 degrees for 20 to 25 minutes or until golden brown.
Yield: 9 servings

   
Kentucky Fresh Broccoli Raisin Salad

1 bunch broccoli, cut into bit-size pieces
1 cup golden raisins
1 medium onion, sliced
2/3 cup sugar
2 tablespoons vinegar
3/4 cup mayonnaise-type salad dressing
10 slices bacon, cooked and crumbled

Combine the broccoli, raisins and onion in a bowl and toss to mix. Mix the sugar, vinegar and mayonnaise-type salad dressing in a bowl. Pour over the broccoli mixture and toss to coat. Marinate, covered, in the refrigerator for 8 to 12 hours. Stir in the bacon just before serving. (For variety, try adding nuts, dried cranberries, orange slices, celery, mandarin oranges, strawberries, grapes or water chestnuts.)
Yield: 8 servings.

Cherry Tofu Delight

8 ounces low-fat cream cheese, softened
1 (10-ounce) package firm tofu
8 ounces lite whipped topping
3 tablespoons honey
1/4 teaspoon almond extract
1 (21-ounce) can lite cherry pie filling

Process the cream cheese and tofu in a blender until smooth. Fold in the whipped topping, honey and almond extract. Stir in the pie filling. Spoon into a serving dish. Chill until set. Garnish with crushed crunchy cereal.
Yield: 14 servings

  Types of Tofu

Firm tofu is dense and solid and holds up very well in stir-fry dishes, soups, or on the grill--anywhere that you want the tofu to maintain its shape. Firm tofu is also higher in protein, fat, and calcium than other forms of tofu.
     Soft tofu is a good choice for recipes that call for blended tofu or in Oriental soups.
     Silken tofu is a creamy, custard-like product which works well in pureed or blended dishes.
