Lime-Mint Melon Salad                                

1 1/2 cups 1/2-inch cubes honeydew melon (1/2 medium)

1 1/2 cups 1/2-inch cubes cantaloupe (1/2 medium)

1 tsp grated lime peel

3 T lime juice

2 T chopped fresh or 1 T dried mint leaves

1 tsp honey

1/4 tsp salt

Toss all ingredients in medium glass or plastic bowl.  Cover and refrigerate about 2 hours or until chilled.
