Chicken Cacciatore

 

1 medium chopped onion

1 cup canned diced tomatoes

1/2 cup tomato sauce

1/8 teaspoon garlic powder

1 teaspoon oregano

1/8 teaspoon pepper

4 pieces chicken, skin removed (thighs, breasts, or legs)

 

1. Place the chopped onion in a skillet.

2. Add the tomatoes, tomato sauce, garlic powder,

oregano, and pepper.

3. Simmer on low heat for 3 minutes.

4. Add the chicken to the skillet. Cover.

5. Simmer over low heat for about 1 hour or until tender.

Optional: Serve over rice or pasta.

Add 1 to 2 cups of chopped fresh vegetables, such as zucchini,

green peppers, eggplant, okra, or banana peppers.

Makes 4 servings
