Broccoli
Soup

T margarine 1/4
c chopped onion 3
T all-purpose flour 2
c low-fat chicken broth 1
c chopped broccoli 1/2
c low-fat or skim milk 1/3
c grated cheddar cheese 1/2 tsp black pepper

Heat
margarine over medium heat. Add
onion. Cook until tender.
Add flour, stirring well. Gradually
stir in broth and broccoli. Reduce
heat. Stir in milk, cheese and
pepper. Continue to stir and
heat until cheese melts, approximately 5 minutes.
Serve immediately. Makes
3 servings. 150 calories; 10 g total fat; 3.5 g sat. fat; 0 g trans. Fat; 25 mg cholesterol; 340 mg sodium; 8 g carbs; 1 g fiber; 2 g sugar 7 g protein; 30% daily value of vitamin C.
