What Is EFNEP?

EFNEP, the Expanded Food and Nutrition Education Program, (established in 1969) is conducted in Kentucky through the University of Kentucky, Cooperative Extension Service.  EFNEP trains paraprofessionals to teach limited resource families how to improve the quality of their daily diets.  While other agencies provide food and other services, EFNEP educates participants to gain the necessary skills to maximize resources and better feed their families.   Educational programs of Cooperative Extension Service serve all people regardless of race, color, age, sex, religion and national origin.

Vision:

As a result of the Kentucky Expanded Food and Nutrition Education Program, limited resource families and individuals will:

  • improve health and wellness

  • improve diet quality, and

  • reduce hunger.

Mission:

The Kentucky Expanded Food and Nutrition Educational Program will educate limited resource people to acquire knowledge, improve skills and change behavior necessary to achieve health and well being.

The Expanded Food & Nutrition Program in Estill County
offer a variety of  lessons on:

  •     Nutritional Meal Planning and Snacks             

  •     Food Preparation Including Recipes

  •     Stretching Your Food Dollar

  •     Food Safety

  •     Gardening & Food Preservation

Low income families with young children are eligible for this program FREE of charge.  New mothers, pregnant and parenting teens and diverse cultural groups are also eligible.  Group meetings can be arranged with several friends and family members attending or an appointment in the families' home can be arranged one-on-one.  Nutritional programs can be done in schools, at day camps and after school programs.  Families are taught a 12 lesson curriculum.  Behavioral and practice changes are evaluated by analysis at entry and exit by use of food recalls and a behavior survey.  Other activities through the program include:

  •     Nutrition Bingo Games (Teaches serving size of different foods)

  •      Gift From the Heart (Cookie/brownie mix in jars)

  •     Moo-trition Game (Calcium teaches children nutrients in milk & cheese)

  •     Kentucky Heritage Foods (Learn how to make butter)

  •     Etiquette (Table manners and table setting)

  •     Peter Rabbit Eats Vegetables

  •     Label Power (Learn how to read nutrition labels)

  •     Food Safety Bingo

  •     Teaches Food Safety 

The program also can set up displays at community events such as:

  •     Displays on Fat & Sugar Intake and Fast Foods Facts

  •     Veggie Babies Display

  •     Food Guide Pyramid Display
